1. Segment the mandarins and drain and dice the tinned pineapple.
2. Pat the fruit dry on kitchen paper – excess juice would thin the cream.
3. Fold the soured cream together with the whipped cream for a light, loose base.
4. Gently fold in the fruit, the desiccated coconut and the halved cherries.
5. Finally add the marshmallows – halve them if they are large.
6. Cover and chill for at least 3 hours, ideally overnight.
Tip: An old classic of American Thanksgiving and Christmas. The resting time is essential: the marshmallows soften and soak up the cream – freshly made it is not the same thing.
