1. Rub the flour together with the cold butter, then add the sugar and egg.
2. Work quickly into a dough, wrap and chill for 30 minutes.
3. Roll out into a pie dish and prick with a fork.
4. For the filling, whisk the eggs with the brown sugar and melted butter until fluffy.
5. Fold in most of the pecans and pour onto the pastry.
6. Scatter the remaining nuts on top and bake at 180°C for 40-45 minutes.
