4. Spread the filling over the pre-baked base and bake at 180°C until set.
5. Beat the egg whites with the sugar into a stiff meringue.
6. Brush the cooled cake with apricot jam and pipe the meringue in a lattice pattern.
7. Dry it briefly in the oven, then cut into squares and serve.
