1. Wash and pit the sour cherries.
2. Put them on to cook with the water until soft.
3. Press or blend them, then strain.
4. Boil the juice again with the sugar and citric acid.
5. Simmer for a few minutes until it thickens.
6. Pour hot into clean bottles and seal.
