1. Activate the yeast in the lukewarm milk with a little sugar.
2. Add the egg yolks, sugar, melted butter, rum, salt and the yeasty milk to the flour, then knead a soft, glossy dough.
3. Let it double in size.
4. Roll the dough to about a finger's thickness, cut out rounds with a glass and let them rise again.
5. Fry in plenty of medium-hot oil, covered on the first side, then uncovered on the second.
6. Drain on paper towels.
7. Serve with apricot jam and icing sugar.
